Ceviche – first impression

For Lent, I decided to give up meat. To say this was difficult, is an understatement. I honestly didn’t realize how much meat I ate until I gave it up.  The first day, I struggled to think of food to eat. What do vegetarians eat? Salad, side dishes, fish? Trying to stay away from carb overload was also a challenge. Needless to say, there’s been alot of fish consumption.
Salmon, perch, grouper, tuna, etc. Then we went on vacation to Punta Cana, D.R. Thankfully, there were vegetarian options. Ceviche of all types were available for lunch and dinner. Ceviche is raw fish or seafood mixed with onions, peppers, lime juice, and seasoning. It’s more of a garnish or appetizer. However, it was a meal for me.

Everyday of my vacation, I tried a different version just to see if I’d like it. The grouper and shrimp ceviche were the best. I chose to eat them with tortilla chips. If you like fish and/or seafood try it. You won’t be disappointed.
